Easy Slow-Cooker BBQ Chicken

Feed a crowd, effortlessly, with this super easy and amazingly delicious recipe. This tasty treat is much healthier than pork but has the flavor and appears of barbequed pulled pork. All that's required in this recipe is to mix the chicken breast, barbecue sauce, and whatever other spices and options are desired, in a slow cooker turning it to either low or high heat. When the meat can be easily pulled apart, it's ready to serve.

 
 

How to 'Quick Pickle' Onions








Ingredients:

  • 1 jar with a tight fitting lid, preferrably a mason jar

  • 1 medium or large red or yellow onion

  • 1 cup sliced red cabbage, optional

  • 1 cup vinegar, apple cider vinegar works well

  • 2 tbsp sugar

  • 1 tsp salt

  • Optional spices such as garlic cloves and peppercorns, as desired

Method:

  1. Add ingredients to the jar and whisk vigorously to dissolve.

  2. Add sliced onions and cabbage (if using), placing the lid securely on the jar, shake vigorously and set in the refrigerator for no more than 2 hours for a crunchy onion and cabbage texture, or leave them in the pickling solution indefinately for a softer texture. Enjoy!

 

How to Effortlessly Feed a Crowd

When it comes to feeding a crowd of people, make-ahead recipes steal the show. Another show-stopping must, is to ALWAYS rely on recipes that are tried-and-true winners.


Trust me, when it's time for the hostess to pony-up a great meal for a bunch of people, this is not the time to try something untested. FAST 5 STEPS TO GET IT TO THE TABLE IN RECORD TIME


ONE

Slice the entire Hawaiian Roll loaf long ways, as pictured, and place the bottom half in a buttered baking dish.



TWO


Layer the bottom half of the loaf with meat, spices, onions, cheese, and any other filling and condiment, as desired.


THREE

Place the top half of the loaf over the top of the fillings, as pictured, and coat generously with melted butter .



FOUR

Put the baking dish in a preheated oven and bake at 325 F for 10 - 15 minutes, or as necessary.



FIVE

Carefully remove the heated loaf of rolls onto a cutting board. Then hold the loaf firmly to keep it together, while carefully slicing the rolls to create individual sliders.

Easy Slow-Cooker BBQ Chicken

Ingredients:

  • 3.5 lbs boneless skinless chicken breasts

  • 3 cups or more of BBQ sauce (I use Sweet Baby Ray's)

  • ¼ cup light or dark brown sugar packed

  • 2 tablespoons apple cider vinegar

  • 2 tablespoon olive oil

  • 2 teaspoon garlic powder

  • 2 teaspoon onion powder

  • 2 teaspoon smoked paprika

  • ¼-½ teaspoon crushed red pepper

Optional Ingredients:

  • 1 medium to large onion sliced

  • 1 large green bell pepper, chopped or whole

  • 1 6-oz can Hunts tomato paste

  • Tikka masala

  • Hot sauce

Optional Cheese Selection:

  • Pepper Jack

  • Kolby Jack

  • Swiss

  • Provolone

  • Parmesan

Method:

  1. Combine BBQ sauce, brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika, crushed red pepper, and optional items, (if using) in a medium to large slow cooker.

  2. Place chicken breast in sauce, turning several times to cover completely with sauce.

  3. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, turning chicken occasionally.

  4. Chicken is done when it is easily pulled apart.

  5. When done, shred chicken breasts with a pair of forks, stir shredded meat coating well with sauce, and serve.
