Easy Chocolate Drop Cookies

Ingredients:


◦ 10 tablespoons unsalted butter, melted and slightly cooled

◦ ¾ cup granulated sugar

◦ 1 large egg

◦ 1 teaspoon pure vanilla extract

◦ 1 cup all purpose flour

◦ ½ cup unsweetened cocoa powder

◦ ½ teaspoon baking soda

◦ ½ teaspoon salt


Method:

  1. Preheat the oven to 350F and line two large baking sheets with parchment paper.

  2. In a large bowl, whisk together the melted butter and granulated sugar until well combined.

  3. Once combined, add the egg and vanilla and whisk until combined.

  4. In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  5. Add the dry ingredients to the wet and mix just until no large lumps of flour remain– do not over mix.

  6. Scoop out 1½ tablespoon sized portions and roll into smooth balls. Place at least 2 inches apart on a prepared baking sheet.

  7. Bake for 9-10 minutes, or just until the edges of the cookies are set– the center will still be a bit soft.

  8. (Optional) For perfectly round cookies, swirl the cookies inside of a round cookie cutter or circular glass when they first come out of the oven.

  9. Allow the cookies to cool completely on the baking sheet (this will help them set fully) and then sprinkle with flakey sea salt (as desired) before enjoying.
