Butter Roasted Asparagus

Butter Roasted Asparagus


INGREDIENTS

  • 2 pound fresh asparagus

  • 2 tablespoons (or more) of good quality olive oil

  • 3 tablespoons butter, salted or unsalted

  • Black pepper, to taste

  • 1 lemon, juiced

  • 2 cups finely grated Parmesan cheese

  • Light sprinkle of red pepper flakes, optional

  • 1 teaspoon of garlic powder

  • Salt, to taste


INSTRUCTIONS

  1. Preheat the oven to 325 degrees

  2. Prepare asparagus by cleaning well, drying well, and chopping off and discarding the hard or tough ends.

  3. Place the asparagus in a glass baking pan or roasting pan. Brush well with olive oil. Sprinkle with a light coating of garlic, black pepper, and a few pepper flakes. Then dot over the asparagus with tiny squares or pats of butter.

  4. Cover with a loose layer of tin foil or the cover of the baking pan, if a cover is available.

  5. Using tongs, turn once or twice while cooking to continue to coat well in the butter. Occasionally, drizzle the lemon juice over the asparagus, and allow the asparagus to continue cooking until tender.

  6. It will be done cooking when a fork can easily pierce through the tougher end part. Thin asparagus could take 15 minutes, thicker asparagus could take up to 25 or 30 minutes. Times vary, will need to check periodically.

  7. Once done, transfer the roasted asparagus to a serving platter and season or salt according to taste.

  8. Also before serving, sprinkle well with Parmesan cheese, optional
