Blueberry Salsa

Easy | Salad | Appetizer | Serves 2 - 3

Blueberry Salsa

INGREDIENTS

  • 2 cups chopped fresh blueberries

  • 1 cup whole fresh blueberries

  • 1 tablespoon finely chopped jalapeno pepper

  • 1/3 cup chopped red onion

  • 1/4 cup chopped red bell pepper

  • 1/4 cup chopped green bell pepper

  • 1/4 cup fresh corn kernels

  • 1 fresh lime, juiced

  • salt to taste

  • cilantro to taste (optional)

Dressing:

  • ½ teaspoon yellow mustard

  • ⅓ cup olive oil

  • ¼ cup fresh squeezed lime juice

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • salt to taste

INSTRUCTIONS

  1. In a bowl, combine chopped and whole blueberries, jalapeño pepper, onion, red and green pepper, corn kernels, lime juice, and salt.

  2. Allowed to sit for a couple of hours to have the flavors meld before serving.

  3. Combine dressing ingredients. Mix vigorously with a fork or whisk, pour and combine, as desired. Please note: Do not skip the yellow mustard it creates a chemical binding of all the dressing ingredients and is a vital part of this recipe.
